Argentinian Skirt Steak

INGREDIENTS:

2 long skirt steaks (about 24 inches for 6 to 8 people)
1 cup virgin olive oil
1/2 cup of Modena balsamic vinegar
1/2 cup crushed garlic
Salt and pepper to taste

PREPARATION:

Marinade: Cut skirts to desired size. Two long skirts will make approximately eight 6-inch steaks.  Mix the olive oil and balsamic vinegar, along with the crushed garlic and salt and pepper. Rub to your heart's desire until every piece of meat is bathed in the marinade. Refrigerate overnight. Grill: Put the grill on high till desired temperature (around 450-500 degrees). Grill each steak for about 2 minutes on each side to seal the outer part on both sides. Lower the heat to about 300 degrees and turn each steak every 2 minutes. With every turn, brush the remaining marinade on each steak till it's completely gone. Steaks should be on grill for about 18-20 minutes. Enjoy the meat in all its juicy flavor.
